How can I fight this.
I’ve never received a speeding ticket in in last 4 years. Cop pull me over in Manhattan, KS for “speeding” I thought speed limit was 70 MPH, to find out I it was 65 MPH and I supposedly was going 83. I know I was going 70. If anything I was going 5 over. Do I have a chance or should I just pay the fine. Also I’m confused why I got a ticket being in Manhattan, KS and I have to go to the cop who pulled me over, his county which is 30 miles out of my way.

You have the option of taking your ticket to trial. There the prosecutor would have to prove beyond a reasonable doubt that you were speeding. If you are found guilty, you'll likely face a fine. If you're found not guilty, you leave without a fine.
You should contact an attorney who practices in the jurisdiction you are charged in as they should be able to inform you of how the prosecutor handles these types of cases. It could be possible to get a diversion or an amendment on your ticket so that it would not adversely affect your driving history nor your insurance.
Call an attorney in the area. They will be able to answer all of your questions.
