I have applied for EB2 green card since April 2017. The I-140 was approved in April 2018 after a year. The interview for the I-485 was in sept 5th 2018 without any response. The interview was fine and the interviewer gave us a paper saying that we can't make any inquiry before 60 days of the interview day. The 60 days will be over within few days. I am worry the they may ask for more time for processing.
The question is, how long is the normal processing time for the I-485 approval?

Despite the paper saying no inquiries for 60’days you can send an inquiry or make an infopass. Also 60 days is not a magic number - you could be waiting several months for answer or it may be soon. It has nothing to do with thenmerits of your case. The wheels are turning very slowly at Immigration these days.
They are required to render a decision within 120 days, and if they don't you should submit an online inquiry. It is also a good idea to deliver an inquiry letter every 30 days and get a stamp on your copy so you can press them later. After 120 days I suggest reaching out to your congressperson who has designated people on staff to deal with USCIS delays. You can also hire a lawyer to liaise with AILA and/or discuss mandamus, which is a federal lawsuit to push USCIS to render a decision - expensive, but effective.
