Applying for Social Security disability benefits will not effect your mom's sponsor cause this program is not listed among federal means tested public benefits. However, if your mom applies for Supplemental Security Income (SSI), her sponsor can be required to repay SSA all payments that were made to your mom.
It might since she did not work here and hence the disability will be considered means tested benefit which eventually come into the I864 sponsor in a form of a bill from the government for the payment she got.

I would need more information to answer your question; however, with a green card, your mom would meet the citizenship status for SSI. She would also need to meet the disability status, the financial requirements, and she may need to meet a 5 year minimum residency requirement.
