Deposition is where most results are. As noted by attorney Koslyn, when taking deposition one can ask whether they signed or reviewed before signed, etc. One should just start questioning without warning or letters . no meet and confer about this, but some attorneys try to do this to shut down questioning.
Yes. OP attorney may affix OP signatures to discovery responses when authorized to do so.

I know of no requirement that there be a certain kind of signature on a discovery verification - an "X" mark over the printed party's name would be ok too.
Since the purpose of a discovery verification is for someone to stand behind those verified discovery responses, you can rely on the lawyer having their client's consent to sign that verification via a stamp.
Your next step is to depose the party about those discovery responses.
