My employer made false statements about me to the unemployment office. The real issue here is that another co-worker made a false statement in written form in an attempt to further his lie and my termination.

If the statement made by the co-worker was false when made and was not opinion but a false statement of fact and you can prove it resulted in your termination, then you have a defamation case.
If you can prove the falsity of the statements, you should send written confirmation of this to the agency that distributes unemployment benefits, in whatever appeal process that agency makes available to you under your state's laws. You would also have a tenable defamation claim, although that would be an expensive proposition.
