That was my question. But, Ill ask this one too. If on the contract it states to make rent payments out to LL's name and not the business, do I address my Demand Letter to LL's name, or the business?
Considering you have provided no context if the issue, and no language of the underlying agreement, All I can say is send a demand letter to everyone.
Lawyers trying to answer your question have no way of knowing or ascertaining your prior question(s). Generally speaking, a demand letter should be in writing and it should be sent via U.S. mail, but additional methods of delivery (such as facsimile transmission, email transmission) can also be used to provide a "courtesy copy".

You need to follow the requirements of the contract (assuming the contract is applicable to your circumstance and question). Generally, sending communications via email would be acceptable. If you need guidance and direction specific to your matter, then your best bet is to consult a business law attorney, who can evaluate and analyze the particulars of your case and advise you accordingly. Good luck.
