It is important that you distinguish between the two types of cases that were created by this accident: civil and criminal. The civil dispute arose between you and the other driver for damages incurred because you ran the red light. The criminal case was created between you and the State of Texas, for violating the law that prohibits running a red light.
Your insurance resolves only one of these two cases. By paying the other driver for damages incurred, your insurance company settled the civil dispute. But insurance companies do not typically pay for criminal fines and assessments, so your traffic ticket remains unresolved.
In other words, regardless of what your insurance company paid the other driver, a visit to traffic court remains on your horizon. Good luck!
You can do deferred disposition or defensive driving even if you were involved in a collision. Defensive driving has to be requested before your initial appearance date listed on the ticket. Deferred disposition is offered by the prosecutor at court usually, but some courts will just let you ask a clerk and sign up for deferred.
