It's a restaurant with 30 + employees, The owner had illegal immigrants doing the demo work, and the demo workers are also the cooks there

In that case, they should have workers' compensation coverage. You would have the option of pursuing a case against them in civil court for negligence or workers' compensation court for workers' compensation benefits.
