Yes. It is reasonable for your employer to ask you for a copy of your vehicle insurance policy. Your employer can require you to provide a copy of your policy as a condition of your keeping your job.

Would we need an expensive insurance claim or would a signed waiver protect us from most liability?

No waiver will be effective. You need an insurance policy with a large amount of coverage. I would recommend $1,000,000 as a starting point. What if someone got hurt and became paraplegic?

You don't say whether your question is a philosophical debate amoung you and your employees or whether your employer is claiming against you. If the latter, as between you and your employer, you are responsible because you had possession of it when it disappeared. Your employer is not required to insure anything, so that argument won't win.

Your question just came up on my screen and I expect the issue was resolved one way or the other. I expect the purchase contract required the owner(s) to have insurance. If your wife was a co-owner, she was required to have insurance. Her decision whether or not to drive the vehicle is a personal one and not one that the insurance company could use against her if she did drive the car and got into an accident.
