My guess is that things like volunteering in a soup kitchen or homeless shelter would be ok, but I would advise against on-the-job-training. For that, the U.S. has the H-3 visa, which has certain limitations. Please see USCIS's website on the H-3 visa here: http://www.uscis.gov/portal/site/uscis/menuitem.eb1d4c2a3e5b9ac89243c6a7543f6d1a/?vgnextoid=8d500b89284a3210VgnVCM100000b92ca60aRCRD&vgnextchannel=8d500b89284a3210VgnVCM100000b92ca60aRCRD
All the best.

What about apprenticeships and on the job training that is unpaid?
