USCIS considers volunteer work to be "work" if it is a job that would normally be paid if filled by a person authorized to work.

And so I assume the same for on the job training or an apprenticeship for a few weeks?

What about volunteer work that is unpaid? Or an apprenticeship or an on the job training that is unpaid?
